Betty demonstrates how to make Green Bean Fries. This is a trendy way to make “French Fries” out of green beans. This dish would be great served with Wasabi and Green Onion Dip (recipe available in Betty's Kitchen) at a Super Bowl Party.
Ingredients:
1 ½ pounds uncooked green beans (Use young, tender, straight beans.)
1 teaspoon salt
1 teaspoon active dry yeast
¼ cup lukewarm water (105 to 115 degrees F)
¾ cup water
1 egg, well-beaten
1 cup all-purpose flour
½ teaspoon salt
peanut oil, enough to come up to 1-inch in a heavy pot
Wash green beans and remove the two ends and any imperfections. Bring about 2 inches of water to a boil in a large pot. Add 1 teaspoon salt and the prepared green beans. Return to a boil, reduce heat, and cook for 2 minutes. Drain green beans and plunge them into an ice water bath to stop the cooking process and retain the bright green color of the beans. Drain, pat dry with paper toweling, and set aside. In a large bowl, combine ¼ cup lukewarm water and 1 teaspoon active dry yeast. Let stand for 5 minutes. Add ¾ cup water, 1 well-beaten egg, 1 cup all-purpose flour, and ½ teaspoon salt. Whisk for 30 seconds or until smooth. Dip prepared green beans (about a dozen at a time) into batter and deep fry in 1-inch peanut oil (heated to 350 degrees to 375 degrees F) until golden. Use tongs or a slotted spoon to remove the cooked green beans to a platter covered with paper toweling to drain. Continue in batches until all green beans are fried. Transfer Green Bean Fries from paper toweling to a nice serving plate. These are terrific served with Wasabi and Green Onion Dip.
