Betty demonstrates how to make Onion Rings of Fire. The “fire” of these onion rings comes from having serrano peppers, cayenne pepper, and Tabasco in the batter.
Onion Rings of Fire
2 Vidalia onions (or other sweet onion)
1 ½ cups all purpose flour, divided
2 serrano chile peppers, minced
1 to 2 teaspoons salt (just to taste)
1 teaspoon cayenne pepper
½ teaspoon freshly ground black peppercorns
1 cup beer
1 tablespoon Tabasco sauce
1 inch of peanut oil in a heavy pot
coarse salt, for sprinkling over finished onion rings
Peel onions and slice into ¼-inches slices. Separate into rings and set aside. In a medium-sized mixing bowl, place 1 cup of the flour, placing the remaining ½ cup flour in a bowl to be used later in the recipe. To the 1 cup flour, add serrano chiles, salt, cayenne pepper, black pepper, beer, and Tabasco sauce. Whisk together. Heat 1 inch of peanut oil in a heavy pot over medium heat to 350 degrees (F). Use tongs to dip individual onion ring into flour, coating well. Dip flour-coated ring into batter, coating well. Shake off excess batter. Drop batter-coated ring into hot oil and fry until golden on top and bottom, turning once during the frying process. Repeat this procedure with the rest of the onion rings, frying a few at a time. Place finished onion rings on paper toweling to drain and sprinkle them with coarse salt. Transfer to a nice serving dish. These are great with hamburgers or steak! --Betty :)
