Betty demonstrates how to make Summer Fruit Gazpacho. This is a fruit “soup” with a variety of fruits, a couple of vegetables, and an herb. It is delicious and very healthy!

Summer Fruit Gazpacho
1 cup finely chopped cantaloupe
1 cup finely chopped honeydew melon
1 cup finely chopped peaches
1 cup finely chopped strawberries
1 cup whole blueberries
1 minced jalapeno pepper, seeded, with fibers removed
¼ cup finely chopped red onion
3 tablespoons finely chopped mint
1 cup orange juice
3 tablespoons honey
3 tablespoons lime juice
salt, to taste
sprigs of mint, for garnish (optional)
Combine all ingredients, except mint sprigs, in a large bowl. Stir until fruits and vegetables are coated with liquid. Cover with plastic wrap and chill until serving time. When ready to serve, spoon fruit pieces and liquid into a sherbet dish. Garnish with a mint sprig, if desired. Enjoy! --Betty
