2-3 cups Chopped White onion
1-2 cups Chopped Carrots
1-2 cups Chopped Celery
1 cup Bourbon
4 cups Chicken Stock
3 Guajillo peppers
1-2 sprigs of Fresh thyme & Rosemary
2 Bay leaves
salt and pepper
Tortillas:
145 grams Maseca (aprox 3/4 cup)
180 grams salted water (aprox 1 cup)
Queso Fresco cheese to finish!
