Courgettes Zucchini Kusa Koosa or Marrow, what ever you call teem this wonderful soup is easy to make and we love it. Cardamon, nutmeg, garlic, lemon and fresh mint are what we have used today, but of course you can pretty much add what you like. Maybe some chilli, cumin, turmeric and give it an Indian vibe or perhaps, paprika, cumin, oregano for a more Mexican taste. We have used butter and cream but again if you would like this vegan no problem at all. The potatoes and carrots give the soup body and again celery or other root vegetables can also work.
