Cheddar Ranch Chicken Strips
Servings: 5
INGREDIENTS
2 boneless, skinless chicken breasts
2½ cups buttermilk
1 packet ranch dressing mix
3 cups cheese crackers
PREPARATION
1. Preheat oven to 425˚F (225˚C).
2. On a cutting board, slice chicken breasts against the grain into strips.
3. Place the chicken strips in a bowl and add in buttermilk and ranch packet. Stir until well-coated.
4. Cover the bowl with plastic wrap and place in the refrigerator for at least an hour.
5. Pour the cheese crackers into a resealable bag and crush with a rolling pin until they become finely ground.
6. Open the bag and place a marinated piece of chicken in the cracker crumbs. Coat the chicken with the crumbs and place on a parchment paper-lined baking sheet.
7. Bake for 20 minutes, flipping halfway.
8. Enjoy!
Chicken And Broccoli Pasta
Servings: 4-6
INGREDIENTS
1 tablespoon oil
1½ pounds boneless, skinless chicken breast, cubed
1 teaspoon seasoned salt
Pepper, to taste
1 small onion, sliced
1 medium head of broccoli
6 cups milk
1 pound bowtie pasta
1 cup shredded Parmesan
1 cup shredded mozzarella
PREPARATION
1. Heat half of the oil in a large pot. Add in the chicken, season with half of the seasoned salt and pepper, and cook.
2. Once the chicken is nicely browned and cooked through, remove it from the pan and add in remaining oil, onion, and broccoli. Season with remaining salt and pepper. Cook and stir until the onions begin to become translucent.
3. Pour in milk and bring to a boil. Stir periodically so the bottom does not burn.
4. Once milk is bubbling, add pasta and stir frequently until pasta reaches your desired doneness (approximately 10 minutes at medium heat).
5. Add in Parmesan and mozzarella and stir until cheese is melted.
6. Enjoy!
Baked Chicken Fries
Servings: 4-5
INGREDIENTS
4 boneless, skinless chicken breasts
2 cups plain bread crumbs
1 cup flour
5 eggs, beaten
1 teaspoon salt
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon paprika
½ teaspoon dried basil
½ teaspoon dried oregano
½ teaspoon pepper
PREPARATION
1. Preheat oven to 375˚F (190˚C).
2. Slice chicken breast in half, and cut into thin strips about the thickness of a french fry.
3. Season bread crumbs with salt, garlic powder, onion powder, paprika, dried basil, dried oregano, and pepper. Mix well.
4. Dredge chicken strips in the flour first, then cover in egg, and coat with bread crumbs.
5. Place on a baking sheet lined with parchment paper and bake for 20 minutes, flipping halfway.
6. Enjoy!

Servings: 4-6
INGREDIENTS
2 boneless, skinless chicken breasts
½ cup breadcrumbs
½ cup grated parmesan
1 teaspoon salt
½ teaspoon pepper
2 eggs
½ cup shredded mozzarella
Marinara, for serving
PREPARATION
1. Preheat oven to 325°F (190°C).
2. Cut the chicken into strips.
3. In one medium sized bowl, add the breadcrumbs, Parmesan, salt, and pepper.
4. In another bowl, crack the eggs and whisk until scrambled.
5. Coat the chicken in the egg, then in the bread crumbs, then repeat.
6. Place the chicken tenders on a baking tray and bake for 20 minutes, flipping halfway through.
7. Sprinkle each tender with mozzarella and bake again for 5 more minutes, or until cheese is melted.
8. Serve with marinara, and enjoy!
