Ethiopian Spiced Butter Recipe Niter Kibbeh Qibe Kibe Tesmi ንጥር ቅቤ Ghee
This version of Kibe is made with Besol Bela, Koseret, Korerima, Garlic and Ginger. Other recipes and there are many may include Abish (fenugreek), Ird or Urd (Turmeric) and even nutmeg and or cinnamon. We are using 2kg of unsalted organic butter. If you use a lower quality of butter you will get a white foam on the surface of the pot, that needs to be removed. This is of course very much like Ghee. Place the butter in a large pan and add all the herbs and spices. Keep this on a low heat to prevent it burning. Note we have cooked the korerima seeds in a dry pan for 2 mins then ground them to a powder. Once all the butter has melted, mix and bring to a rolling boil for about 45 mins. WARNING - This is boiling oil so be very careful. Now simply strain the oil and discard the herbs and spices.
