Whether it's beef, whether it's poultry, whether it's pork, when you get a package that you see there's a lot of blood in that package, this is a piece of meat that's been sitting around for a while. As a piece of meat sits it loses weight because the natural juice is coming out and the meat is drying up. So you certainly want to look at packaging that does not have a lot of blood in it. When you turn the package over you don't see blood all running down to the bottom. That'll tell you that that was a nice freshly cut package. That's the best way to use it.
