Let's make Mangú! I grew up eating this classic dish every single Saturday. There was never a weekend where my grandmother wasn't boiling plátanos and frying up eggs, salami, and queso to go alongside! What's your favorite part of Mangú? Is it the onions? The salami? Or that runny yolk? Comment below!
Ingredients:
3 green plantains, peeled and quartered
6½ cups water, divided
1 tablespoon kosher salt
1½ tablespoons unsalted grass-fed butter
1 medium red onion, sliced
¼ cup white distilled vinegar
4 oz queso tropical, for frying
6 oz Dominican salami
2 large cage-free eggs, fried
Vegetable oil, for frying
