I hate freezing cheeses, bottom line, but sometimes you buy too much and what are you going to do? Lose it? What I recommend doing is cutting sections. Put them in the freezer. Take them out of the freezer like a day ahead. Put them in the fridge. You have to use it pretty quickly after that because the cheese is going to start to break down. Not that it's going to be bad for you but it's not going to have all of the flavor.
