Buffalo Chicken Nachos
Inspiration:
1 bag blue tortilla chips
3 cups cooked chicken breast, shredded
¼ cup butter
1-2 cloves garlic, minced
½ cup hot sauce
1 tsp Worcestershire sauce
2 tbsp butter
2 tbsp flour
1 cup milk
1 cup Monterey Jack cheese, shredded
1 cup blue cheese, crumbled
2 green onion, finely sliced
1 celery rib finely sliced
In a large skillet melt butter over medium high heat. Add garlic and cook for 30 seconds. Add hot sauce and Worcestershire sauce. Simmer for 1 to 2 minutes. Add chicken and toss to coat. Cook for an additional 3 to 5 minutes or until chicken is heated through. Set aside.
In a small saucepan melt butter over medium heat. Add flour and whisk constantly until mixture is smooth and slightly golden. Add the milk and whisk until well combined and smooth. Add cheese and stir until it is completely melted.
Preheat oven to 350°F. On a baking sheet arrange tortilla chips in a single layer.
Spread Buffalo chicken evenly over tortilla chips and drizzle with blue cheese sauce.
Top with more crumbled blue cheese. Bake for 5 to 7 minutes. Finish with finely sliced celery and green onion.
Pizza Nachos
1 bag tortilla chips
1 cup tomato sauce
2 cups mozzarella cheese
4-6oz pepperoni
1 green bell pepper, thinly sliced
1 small red onion, thinly sliced
¼ cup banana peppers
¼ cup black olives, pitted and chopped
red chili flakes
ranch or garlic dip
Preheat oven to 350°F. On a baking sheet arrange tortilla chips in a single layer.
Spread pizza sauce evenly over tortilla chips and sprinkle with half the cheese. Top with pepperoni, green bell pepper, red onion, banana peppers and olives. Top with the other half of the cheese. Bake for 5 or until cheese is melted. Finish with red chili flakes and serve with garlic dipping sauce.
Chocolate Peanut Butter Pretzel Nachos
4-6 cups pretzels (I’m using pretzel thins but you can use any kind of pretzels that make you happy)
½ cup peanut butter chips
½ cup mini peanut butter cups, chopped
½ cup peanuts
½ cup fudge sauce
½ cup caramel sauce
Preheat oven to 350°F. On a baking sheet arrange pretzel thins in a single layer. Top with peanut butter chips, mini peanut butter cups and peanuts. Drizzle with chocolate and caramel. Bake for 3 to 5 minutes or until chocolate is melted. Serve with whipped cream.
Sara Lynn’s Guide To Nachos
1. Don’t limit yourself to tortillas – Doritos, Tater Tots and even Goldfish can work as a nacho base.
2. Don’t skimp on the cheese!! This is a major pet peeve of mine.
3. Layer the cheese in – if you’re layering your nachos, it is critical that you layer in your cheese. There’s nothing worse than getting through the top layer and realizing there is no more cheese.
