There are 2 varieties of this vegetable: the one grows to about 20 cm long, is pale green in color and oblong. The second one is dark green, oval and is about 10 cm long. Bitter gourd thrives in humid and hot climates, so they are commonly found in Asian countries and South America. This vegetable has a very low caloric value, but it is abundant in nutrients. It is an excellent source of vitamins B1, B2, and B3, C, magnesium, folate, zinc, phosphorus, manganese, and has high dietary fiber. It is rich in iron, contains twice the beta-carotene of broccoli, twice the calcium of spinach, and twice the potassium of a banana. This vegetable is not that usual in the west, and people might find difficult to consume it because of its bitter taste. However, it is worth a try because of its numerous health benefits.
