Protein Power Pancakes
2 eggs
1 ripe banana
1 tsp coconut oil for frying
Add eggs & banana to your blender. Blend until the ingredients are well combined.
Over medium-high heat, melt coconut oil.
Pour 2-3 pancakes into the frying pan.
When pancakes are golden brown on one side, flip the pancakes and cook for another 30-45 seconds.
Serve with fruit, almond butter or maple syrup.
