4 Ways to Cook with Mayo, Even If You Hate It

Recipes:

Chocolate Cake
Ingredients:
Box of chocolate cake mix
2 large eggs
1 ½ cups water
⅓ cup mayonnaise
Chocolate icing (optional)
Directions:
Preheat oven to 350ºF
Grease pan
Dump the cake mix into a large mixing bowl
Add eggs, water and mayonnaise
Mix by hand or with an electric mixer until well combined
Pour the cake batter into the cake pan and spread evenly
Bake for 35 minutes or until cake is done
Let cool and spread icing on top to finish

Scrambled Eggs
ingredients:
8 large eggs
1⁄4 cup mayonnaise
salt and freshly ground pepper to taste
2 tbsp salted butter
1 tbsp chopped fresh chives (optional)
Directions:
Whisk together the eggs, mayonnaise, salt, and pepper in a medium bowl
Melt the butter in a large nonstick skillet over medium high heat
Add the egg, let it set for 30 seconds
Cook, stirring with a spatula to create large curds
Cook until the eggs are firm but still creamy
Sprinkle with the chives (optional)

Grilled Cheese:
Ingredients:
1 tbsp mayonnaise (aprox)
2 slices white bread
2 slices muenster cheese
Shredded mozzarella
Directions:
Spread mayonnaise onto one side of a slice of bread and place (mayo side down) in a skillet or pan
Place a handful of shredded cheese over bread, and top with a slice of muenster cheese Spread mayonnaise onto one side of the remaining bread slice, and place (mayo side up) on top of the cheeses
Cook sandwich in the skillet over medium heat until cheeses melts and the bread is golden brown (about 3 minutes per side).


Cheddar Drop Biscuits:
Ingredients:
½ cup mayonnaise
1 cup milk
2 cups self-rising flour
1 cup of shredded cheddar cheese (add more or less depending on your taste)
1 tsp dry thyme
1 tsp garlic powder

*DIY self rising flour: (makes 2 cups)
2 cups all-purpose flour
3 tsp baking powder
1/4 tsp salt
Directions:
Combine all ingredients in a bowl and whisk until fully incorporated

Cheddar Biscuits directions:
Preheat oven to 400°F
Combine flour, mayonnaise and milk in a medium bowl, and stir until incorporated
Add cheese, thyme and garlic powder, stir and combine
Drop globs of the mix on a greased baking sheet about 1-2 inches apart
Bake 20-25 minutes or until they rise and look golden brown
