Cold Brew Nog:
Eggnog:
4 room temperature eggs, separated (yolks in one bowl, whites in another)
1/3 cup plus 1 tablespoon sugar
1 cup heavy cream
2 cups whole milk
1 teaspoon freshly grated nutmeg
Add the 1/3 sup sugar to bowl with egg yolks, whisk vigorously until yolks lighten in color and sugar dissolves. Add the cream, whole milk, and nutmeg, and whisk until combined. Set aside.
Using a whisk, hand mixer, or stand mixer, whisk egg whites vigorously until soft peaks form. Add 1 tablespoon sugar, and whisk until stiff peaks form. Add whites to the yolk mixture, and gently whisk until incorporated. Put in pitcher and chill
Combine 2 cups cold brew concentrate to pitcher with eggnog, and stir. Serve with freshly grated nutmeg on top.
