One of the easiest ways of transforming your leftovers into something truly special, particularly if you can get your hands on some shop bought bao buns. If not this same mix works wonderfully in toasted brioche buns.

INGREDIENTS:

For the turkey:
2 tbsp sunflower oil
14oz/ 400g leftover turkey, shredded
1 garlic clove, crushed
Thumb sized piece ginger, sliced
1 red chilli, finely chopped
1 tbsp sesame seeds, toasted
2 tbsp light brown sugar
1 tbsp honey
2 tsp chinese 5 spice
4 tbsp hoisin sauce
1 tbsp rice wine vinegar
2 garlic cloves, grated

To serve:
4 bao buns
1 carrot, julienne peeled
4 spring onions, thinly sliced
½ cucumber, julienne peeled
Handful coriander leaves
