Betty demonstrates how to make Nutter Butter Peanut Butter Truffles. This candy is made from Nutter Butter cookies and cream cheese. It is coated with a vanilla candy coating and a semisweet chocolate drizzle.
Ingredients (for full recipe):
16-ounce package Nutter Butter Peanut Butter cookies (or cookies of your choice)
8-ounce package cream cheese or Neufchatel cheese, softened
24-ounce package vanilla candy coating mix (or white chocolate almond bark)
1 cup semisweet chocolate chips (optional)
Use a food processor to crush the peanut butter cookies into fine bits. Add cream cheese to the crushed cookies and process until well combined. Shape dough into 1-inch balls and place on a pan lined with waxed paper. Chill about 1 hour. Melt vanilla candy coating in microwave about 2 ½ minutes at 50% power. Dip balls into melted coating and place on waxed paper. Place dipped balls in refrigerator to set up quickly. When coating is set, melt semisweet chocolate in microwave for 2 minutes at 50% power and drizzle over the top of each ball. Refrigerate to set up completely.
