Betty demonstrates how to make Scrambled Eggs and Hominy. This is a great alternate to regular scrambled eggs.
Scrambled Eggs and Hominy
3 eggs
¼ teaspoon salt
1 can golden hominy, drained
1 tablespoon butter
Place the eggs in a medium-sized bowl and add salt. Whisk, just until the eggs are broken up and mixed together. Stir in drained hominy. Melt butter in a skillet over medium heat. Add egg and hominy mixture and use a spatula to push the mixture around as it cooks. Cook until the eggs are done all the way through. Be careful not to overcook. Remove from skillet and spoon onto serving plates. Delicious! --Betty :)
