We always love making fried chicken at home, it taste so much better than fast food places. KFC is good but of course it is fast food, we think these are better than them by a mile. you can use any part of the chicken you like, we have used drumsticks for this recipe. Flour and breadcrumbs are mixed add the spices and herbs added. We then dip the chicken in beaten eggs, into the flour and then repeat giving them a double coating or double dip. Then it is over to the fryer, we have used sunflower oil but you can use what you like. Chili, paprika, garlic, ginger, basil, marjoram, coriander and plenty of salt and pepper are in the mix as well as a touch of baking soda. The mix of the flour and breadcrumbs gives a great texture. Get your oil hot but not crazy hot otherwise you will end up with either black or raw chicken. We really hope you enjoy these as much as we do and dont forget you can always play around with the spices, try some 5 spice, oregano, or take them in a more Asian, Mexican or even Indian direction.
