1 INCH GINGER
CLOVES
STAR ANISE
CINNAMON
PLACE THE PORK SKIN SIDE DOWN IN WATER AND ADD THE SPICES.
COOK FOR 12 MINS
REMOVE AND DRY WITH PAPER TOWELS
WITH A FORK PROD THE SKIN MULTIPLE TIMES
TURN THE PORK OVER AND RUB ON 5 SPICE POWDER (2 TSP)
RUB SALT ALL OVER THE SKIN AND FRIDGE FOR 1 HOUR MIN BUT OVERNIGHT IS BEST.
PLACE ON A RACK OR AS WE HAVE DONE ON CARROTS OR OTHER VEGETABLES.
ADD 1CM OF WATER, MAKE SURE THE PORK IS NOT TOUCHING THE WATER.
PLACE IN A RE HEATED OVEN FOR 45 MINS

THAT IS IT YOU WILL NOW HAVE SOFT MOIST MEAT WITH A VERY CRISPY CRUNCHY SKIN.
