OATMEAL DATE PANCAKES
1½ cups oat flour
½ cup old fashioned oats
2 tsp baking powder
½ tsp cinnamon
¼ tsp salt
1 cup almond milk
1 egg
1 Tbsp coconut oil
½ cup Sunsweet® chopped dates
Combine the dry ingredients in one bowl. Combine wet ingredients separately in another bowl. Add the dry ingredients to the wet, and stir in the chopped dates last.
Heat a skillet over medium-high heat. Add ¼ cup batter to the skillet (I use an ice cream scoop). Turn when tops are bubbling, after 1-2 minutes. Cook on another side for another minute.
Serve with favorite toppings and enjoy.
Yields 3 servings, ~10-12 pancakes total (depending on size)
Per serving (~3-4 pancakes), yields 3 servings:

DRIED FRUIT BARK (for S’MORES)
1 bag (11.5 oz) chocolate chips of choice (dark, semi, milk, vegan, etc.)
⅓ cup Sunsweet® Amaz!n diced prunes
⅓ cup Sunsweet dried cherries, chopped
⅓ cup slivered almonds
For s’mores: graham cracker sheets & large marshmallows!
Melt chocolate over a double boiler or in the microwave.
Spread melted chocolate onto a parchment sheet on a baking tray, a bit thinner than a chocolate bar. Sprinkle on dried fruit and nuts.
Allow to harden at room temperature or in the fridge/freezer.
Cut into squares the size of your graham crackers.
Roast marshmallows and make s’mores!
Yields ~24 chocolate fruit bark squares (depending on size of cut).
Per square, yields 24:
