Ingredients :Haddock -180g, Salmon -180g, Celery - 50g, Onion - 50g, Garlic - 3g, Butter - 50g, Flour - 50g, Parsley/dill - 3g, Fennel - 50g ( Optional ) Fish Stock - 450ml, Cooking Wine - 25 ml ( Optional )
Potatoes - 500g
Method:
1) Salmon skin off and diced, Smoked haddock skin off and diced, add prawns 5-10 each ( Optional)
2) Cut vegetables into small dices and finely chop garlic.
3) Sweat off all the vegetable in butter then deglaze it with white wine ( Optional)
4) Gradually mix in the flour until you have achieved smooth paste consistency and cook for few minutes.
5) Slowly add in your fish stock, stirring constantly to avoid lumps in the sauce
6) Cook on low heat for few minutes and add all the fish, parsley/dill and remove from heat
7) Crush potatoes and layer it on top of the fish pie
8) Cook in a preheated oven at 165C for 30 min or under a medium heated Salamander/Grill for 20-25 min.
