When you're grilling with charcoal there are two basic categories. There's lump charcoal and there're briquettes. Each type of charcoal has its advantages. The lump charcoal tends to light really quickly, burn really hot, and it gives you a fabulous smoky aroma. The briquettes, on the other hand, light a little bit more slowly but they stay lit for a longer period of time so you get a nice even fire that way. Very often I actually like to use a combination of both. I'll start with a bed of the briquettes and then I just feed the fire with a little bit of the lump charcoal to give me a little bit more heat and that good smoky aroma.
