Is there anything better than a bowl of noodles and juicy roast pork? Yes? Then you probably haven't tried mì khô xá xíu. It's a Vietnamese dry noodle dish with fresh egg noodles, vegetable and roast pork (xa xiu/char siu) all tied together in this sweet and salty sauce. Seriously. The sauce itself is SO ADDICTING. It doesn't take much to make this recipe so let's get started!

Ingredients you'll need:
- 3 tbsp vegetable oil
- 3 shallots
- 5 cloves garlic
- 1 thai chili
- 2 tbsp sugar
- 3 tbsp oyster sauce
- 3 tbsp hoisin sauce
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- 300g cooked egg noodles
- handful of bean sprouts
- handful of garlic chives
- 250g cooked xa xiu/char siu
