Pavlova is perfect for Australia day! (Even if the Kiwi's invented it :P) Topped with whipped cream and fresh fruit, its just delicious.

Ingredients:

6 egg whites, at room temperature
Pinch of salt
1 1/2 cups (330g) caster sugar
3 tsp cornflour
1 tsp white vinegar
1 tsp vanilla essence

Topping:
300ml thickened cream
Kiwi fruit, Mango, fresh passionfruit, banana & mint leaves to serve on top.
