When the craving for a fried chicken sandwich hits, it’s usually time to hit up your local takeout joint. But what if you could scratch that itch directly from your own kitchen? We challenged DeVonn Francis to fry up and serve a chicken sandwich faster than it takes for delivery to arrive. Was he up to the challenge?
Recipe below:
INGREDIENTS
Fried Chicken:
Peanut oil, for frying
4 skin-on, boneless chicken thighs (about 2 lbs)
1 large egg
1 ½ cups buttermilk
2 ½ cups all-purpose flour
½ cup panko
Dash cayenne pepper
1 tsp. espelette
1 tsp. ground mace
1 Tbsp. sweet paprika
1 tsp. onion powder
1 tsp. ground chiles de árbol
Kosher salt
Freshly ground black pepper
Slaw:
¼ head red cabbage
¼ head green cabbage
¼ cup mayonnaise, preferably Kewpie
1 Tbsp. honey or agave syrup
Juice of 1/2 lime
1 Tbsp. white vinegar
Kosher salt
Peppa sauce:
1 scotch bonnet pepper, stem removed 1 bunch scallions, roughly chopped
1 tsp. ground allspice (pimento)
2 pickled guindilla peppers1 cup pickling liquid from guindilla peppers or white vinegar or a combination
1 Tbsp. light brown sugar1 tsp. kosher salt
Assembly:
Brioche buns
