Spaghetti Squash
Olive oil
Salt
Pepper
Select a spaghetti squash that is light to dark yellow but doesn't have any soft spots.
Cut off one end of the squash so it lies flat. Slice the squash in half and de-seed with a spoon. Brush the inside with olive oil, salt, and pepper. Place squash face down in a microwave-safe baking dish and fill with 1 inch of water.
Microwave on high for 12 minutes or until the skin can be pierced with a fork.
Let cool for 15 minutes. Use a fork to scrape out spaghetti-like strands. Add your favorite toppings and enjoy!
