So many of you have been waiting for this video for so long! Here’s my newest What I Eat In A Day… and I’ve been eating mostly plant based at home so this is another vegan edition!

OATMEAL COOKIE SMOOTHIE RECIPE
3/4 cup almond milk
1/4 cup oats
1 frozen banana
1/2 Tbsp peanut butter
1/2 Tbsp coconut sugar
1/4 tsp cinnamon
1/8 tsp pumpkin pie spice
1/8 tsp vanilla extract
pinch of salt
3-4 ice cubes
Blend everything together! Enjoy!
MEXICAN QUINOA CUPS RECIPE (with vegan option)
3 cups cooked quinoa (about 1 cup uncooked)
1 15 oz can black beans
1 onion
½ cup frozen corn
1 bell pepper
2 tsp garlic
¼ cup cilantro (to taste)
1 cup salsa
2 eggs or egg substitutes for vegan (chia/flax egg)
1/3 cup nutritional yeast
½ tsp chili powder
1 tsp umin
½ tsp salt
Mix everything in a bowl until well combined.
Scoop into a muffin tin and press down so they are compact.
Bake in an oven preheated to 350F for about 30 minutes.
Allow to cool completely before removing from the pan.
**eggs will hold together better than egg substitute
