#167 Making Jamie Oliver's Miso Ramen | But Uncle Roger's Favorite

After a seeing ramen from Nigella Lawson, followed by Jamie Oliver also cooking his own famous Japanese soul food Ramen, we would like to introduce our own recipe for homemade Miso Ramen ( 味噌ラーメン )!

(Measurements for the tare and mirin substitute further down!)

Our version starts with a rich chicken soup and a miso tare that is rich and silky. Topped with menma (Pickled Bamboo shoots), Wood Ear Mushrooms, Corn, Chicken Chashu, Soft Boiled Ramen Eggs, shredded leeks and a pat of butter, this was definitely comfort in a bowl!

Joshua Weissman might have made a 3 Dollar Homemade Ramen on his " But Cheaper " series, but we wanted to show how much work goes into one bowl of ramen, so please enjoy our miso ramen recipe - its not easy ramen by any means, but we tried to make it as authentic as we could!

Originating from China, Ramen in Japan has evolved into something completely in its own class these days. In Tokyo, we have an endless variety of ramen noodles to choose from!

After watching the soba noodle fiasco in "Jamie Oliver ALMOST Made Ramen..." By mrnigelng, as well as the original video on Jamie Oliver's foodtube channel / Jamie's 15-Minute Meals channel we wanted to make an authentic, proper gourmet miso ramen. Should we make more Japanese recipe content for future videos?

So tomodachis, we know that it can be hard to get to restaurants like Ichiran or Ippudo for their tonkotsu ramen, so why not try our Japanese ramen recipes from our home cooking podcast as a weekend project ?

From BBC Foods to Jamie Oliver, Nat's what I reckon, Kays cooking and Gordon Ramsay - most recently, so many of Chef Wan's delicious recipes, it was fun to see Uncle Roger feature some popular dishes from Japan today! We are really excited for another Taiwanese and Japanese reaction to Uncle Roger!

▶︎Miso Tare Recipe:

3 large table spoons (100g) White miso
3 large table spoons (100g) Koji/Soybean miso mix
1 large table spoon aka miso (33g)
1 tablespoon cane sugar (10g)
1 tablespoon ground sesame (5g)
1 teaspoon fish sauce (5g)
1 tablespoon mirin (12g)
1/3 cup Japanese Sake or diluted asian pear juice or water (100ml)
2 tablespoon oyster sauce (20g)
1 tablespoon chicken bouillon (5g)
1 large tablespoon toubanchan (15g)
25g garlic (about 4 cloves)
50g onion (about 1/4)

▶︎Mirin Substitute to make Halal Ramen etc.
- 140 ml warm water
- 2 tablespoons White Vinegar
- 5 Table Spoons of Sugar
Stir everything together until sugar is dissolved
