RECIPES:
Stuffing Crusted Tofu:
-1 block extra firm tofu
-Everything But The Leftovers Seasoning
-Panko bread crumbs
-1 medium Delicata squash
-Olive oil
-Turmeric
-Salt and pepper
-1 package Riced Cauliflower Stuffing
- Cranberry sauce
Lightly press the tofu, cut into bite-size pieces, and coat with Leftover seasoning and Panko breadcrumbs. Slice the delicata squash, scoop out the seeds and stringy insides, toss with olive oil, salt, pepper, and turmeric. Both the tofu and the squash can go into the oven together at 400 degrees F for about 30 minutes. Flip both halfway through. Cook cauliflower stuffing according to package. Plate with cranberry sauce, garnish with fresh herbs.


Pumpkin braised chickpeas with hearty farro:
- 1 package Holiday Hash
- Olive oil
- 1 can chickpeas
- 1 package 10 Minute Farro
- Spicy Pumpkin Simmer Sauce OR Butternut Squash Soup
Heat 1 Tbsp olive oil in a saute pan. Add the holiday hash blend and cook on medium-high until it starts to brown. Add 1 can of rinsed and dried chickpeas and simmer sauce or soup. Allow flavors to meld for ~10 minutes. Cook farro according to package directions.
