Breakfast Quesadillas
2 whole wheat tortillas
½ cup cheddar, shredded
2 eggs, boiled and chopped
¼ cup chopped ham
1 tbsp green onion, finely chopped
hot sauce to taste
Place tortilla in a large frying pan.
Layer with half the cheese, boiled eggs, ham, green onion and hot sauce.
Top with the other half of the cheese and finally, the second tortilla.
Cook over medium-high heat for 2-3 minutes or until cheese begins to melt.
Carefully flip the quesadilla and cook for an additional minute on the
other side.
Enjoy!
Pesto Chicken Quesadillas
2 whole wheat tortillas
½ cup mozzarella cheese
½ cup chicken, cooked and diced
2 tbsp pesto sauce -
½ cup roasted red peppers, finely chopped
In a small bowl mix chicken and pesto sauce.
Place tortilla in a large frying pan.
Layer with half the mozzarella cheese, chicken pesto mixture and roasted red pepper.
Top with the other half of the cheese and finally, the second tortilla.
Cook over medium-high heat for 2-3 minutes or until cheese begins to melt.
Carefully flip the quesadilla and cook for an additional minute on the
other side.
Enjoy!
Black Bean Quesadillas
2 corn tortillas
½ cup cheddar cheese
½ cup black beans, lightly mashed
½ cup corn
½ cup red bell pepper, finely diced
1 tbsp green onion, finely chopped
½ tsp chili powder
hot sauce to taste
In a small bowl mash black beans with a potato masher.
Place tortilla in a large frying pan.
Layer with half the cheddar cheese, black beans, red pepper, green onion, chili powder and hot sauce.
Top with the other half of the cheese and finally, the second tortilla.
Cook over medium-high heat for 2-3 minutes or until cheese begins to melt.
Carefully flip the quesadilla and cook for an additional minute on the other side.
