Summer Salad with Strawberry Poppy Seed Dressing
For the salad:
6-8 cups mixed greens
1 cup sliced strawberries
½ small red onion, finely sliced
½ cup candied pecans
½ cup goat cheese, crumbled
For the dressing:
½ cup strawberries
¼ cup plain yogurt
¼ cup apple cider vinegar
2 tsp honey
salt and pepper
2 tsp poppy seeds
In a large bowl top mixed greens with sliced strawberries, red onion, pecans and goat cheese.
In a blender combine strawberries, yogurt, apple cider vinegar, honey,
salt and pepper.
Blend well.
Stir in poppy seeds.
Dress salad just before eating.
Enjoy!
Strawberry Cheesecake Dip
1 8oz package cream cheese, room temperature
2 tbsp icing sugar
1 cup vanilla yogurt
1 cup strawberries, finely chopped
In a stand mixer, beat cream cheese and icing sugar until smooth.
Add vanilla yogurt and strawberries.
Beat until well combined.
Serve with graham crackers for dipping.
Strawberry Basil Margaritas
½ cup strawberries
2 basil leaves
1oz silver tequila
1oz orange liqueur
1oz lime juice
ice
Blend ingredients well.
Serve in a salt-rimmed glass.
