TUNA CHILI STUFFED POTATOES:
FREEZER OATMEAL CUPS
3 cups water
pinch of salt
11⁄2 cups oats
2 Tbsp maple syrup
Bring water and salt to a boil in a saucepan over high heat. Reduce heat to medium and add oats. Cook for 5 minutes, stirring occasionally. Add maple syrup and stir to integrate. Remove from heat. Spray muffin tin with cooking spray. Divide cooked and slightly cooled oats into cups. Cover with plastic wrap and freeze 4 hours, to overnight. Once frozen, remove oatmeal cups from tins and transfer to freezer bag or air-tight container.
