Start with the pancake batter: we need a light, plain batter, and a dark, cocoa batter. Separate 2 egg yolks from the whites: add the milk and the melted butter to the egg yolks and stir to blend. Divide the mixture equally into 2 bowls: sift the flour and the baking powder into a bowl for the light batter; whereas for the dark batter, sift in the flour, the cocoa powder and the baking powder. Now stir both mixtures until smooth and well blended. The two batters should be the same consistency, if one is thicker than the other, add more milk. Now beat the egg whites with the sugar until stiff: eggs should be used at room temperature for best results. Adding sugar helps the egg whites hold their shape.
Divide the egg whites evenly into the two bowls and fold gently. Then transfer the mixtures to these squeeze bottles: as an alternative, take a pastry bag and cut off a tiny bit of the corner. Move on to cooking.
I’m ready for drawing, I’m sure you’ll like it: heat a crepe or non-stick pan, as long as it is flat; keep the heat very low, if the pancake browns too quickly, turn off the heat, complete the drawing, then turn on the heat again. Start with a bunny: grease the pan with butter for the first pancake, coating evenly. First the muzzle, then the ears. Alternate the colours and fill in the outlines; we’ll make the eyes with melted chocolate, so fill in the shape. Once cooked, lift with a spatula and transfer to a plate. Repeat with different shapes. It’s done, use a non-stick spatula, being careful not to break the pancake, and place on a plate. Now I’ll draw a kitten. Use your creativity to make any shape you like, playing with the contrasting colours.
Melt the dark and white chocolate, cut off the corner of a disposable pastry bag and draw the eyes; in this case, my kitten is dark, so I’ll use white chocolate for the details, the nose, the mouth and nice, long whiskers. for 8-10 pancakes
- less than 1 cup (200 ml) of milk
- 2 eggs
- 1 ¾ tbsp (25 g) of butter
- 3 ½ tsp (15 g) of sugar
For the light batter
- ⅔ tsp (3 g) of baking powder
- ⅔ cup (75 g) of cake flour
For the dark batter
- ⅔ tsp (3 g) of baking powder
- ⅓ cup (45 g) of cake flour
- 2 ¾ tbsp (15 g) of unsweetened cocoa powder
For garnishing
- 1,8 oz (50 g) of white chocolate
- 1,8 oz (50 g) of dark chocolate
