We’re back in the kitchen with Food Editor Silvana Franco and her son Fabio as they make a simple fish pie using smoked haddock and prawns.

You can cook this recipe as one big dish for four or make individual portions like Silvana does, then freeze them and bring one or two out when you need a quick meal. You could swap the mashed potato topping for sweet potato or even thinly sliced potatoes if you prefer. And you could try using cod or salmon instead of haddock for the filling.

Ingredients:
800g floury potatoes, peeled and cut into large chunks
500ml whole milk, plus extra 4 tbsp
30g mature Cheddar, finely grated
2 tbsp olive oil
2 leeks, finely sliced
1 large clove garlic, finely chopped
½ tsp mustard powder
40g plain flour
500g Smoked Haddock Fillets (from the fish counter – ask for them skinned), cut into large chunks
220g Extra Large Raw King Prawns
25g pack flat leaf parsley, leaves finely chopped
