Recipe:
Cinnamon Roll Baked Doughnuts
From Nicole Iizuka, POPSUGAR Food
Serves: 6
Total Time: 30 minutes
For the doughnuts
1 cup all purpose flour
1/3 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 cup plain Greek yogurt
1 egg
1/2 cup milk
For the topping
1 tablespoon butter, melted
2 tablespoons granulated sugar
2 tablespoons cinnamon
For the glaze
1/2 cup powdered sugar
1 teaspoon milk
INSTRUCTIONS
Preheat oven to 350oF and grease a doughnut baking pan. Optionally if you do not have a doughnut baking pan, grease a muffin pan.
In a large bowl mix together the doughnut ingredients, flour, sugar, baking powder, cinnamon, salt, yogurt, egg, and milk until fully combined. Place mixture into a piping bag, or a plastic bag with a corner. Snip the end of the bag and pipe batter into the doughnut baking pan 2/3 of the way full. If you are using a muffin pan, then fill the muffin pans 1/2 full with batter.
Bake for 15 to 18 minutes or until dough springs back lightly when touched. Let cool completely.
While the doughnuts are baking, mix sugar and cinnamon in a small plate. Also make the glaze by adding milk to the powdered sugar until the consistency is thick enough to hold, but thin enough to drizzle.
If using muffin pan, use a small circle cutter to cut the center out of the doughnut.
Take each doughnut and brush the top with melted butter. Then dip in cinnamon sugar mixture and set on a wire rack or cutting board. Drizzle the top with glaze and let dry.
