Arab beef and Rice. Kabsa or Machboos. Highly seasoned rice with super tender beef. Ingredients and method below.
1kg Beef (We are using Chuck)
Spices for the Meat. (Powders)
1tsp Black lemon
1tsp Green Cardamon
1tsp Chili
1tsp Turmeric
1tsp Cumin
1tsp Coriander
1tsp Nutmeg
1tsp Garam Masala
Salt Pepper
Add all powders to the meat with olive oil and mix well.
In a large pan with a little oil add the meat and on a low heat cook for 8mins.
Now add 2 medium sliced onions and 1 Tsp chopped garlic, cook for 5 mins.
Add 3 mediums tomatoes and 1 litre water, bring to the boil then on a rolling boil cook for 10 mins.
Now we need to add - 6-8 Green Cardamon whole - Bay Leaves - 2 x whole Black Lime - Cinnamon & Cloves.- 135grm Tomato paste - 1 litre water. Cook for mins.
4 cups Basmati rice, washed and soak for 5-10 mins.
Add the rice lid on and cook for 8-9 mins.
Top with chopped cilantro at the end.
