Making kimchi has always been a dream of mine, but between my mom dropping her homemade jars off or picking some up at the store, I hadn't got around to it until now. Seung Hee takes us (remotely!) through the steps of making authentic kimchi that tastes great literally as soon as you're done. We hope you all enjoy this video as much as we did making it!

▶▶ INGREDIENTS ◀◀
1 1/2 ounces of dried kelp (kombu)
2 tablespoons of glutinous rice flour (sweet rice four)
11 cups of water
1 cup of Korean course sea salt, 3/4 cup of fine sea salt, or 1/2 cup of kosher salt
5 to 6 pounds napa cabbage, chopped into 1 1/2 inch pieces
1 cup of gochugaru
1/2 cup of fish sauce
3 tablespoons of minced garlic
1 1/2 teaspoons of minced fresh ginger
1/2 large Korean pear, peeled, seeded and grated
3 cups of Korean radish, julienned
3/4 cup sliced Korean chives or green onion, cut into 1 1/2 matchsticks (about 1 ounce)
3/4 cup of minari, cut into 1 1/2 matchsticks (optional), or add more chives or green onions
