Grilled Watermelon Steak with Mint and Feta
(serves 2)
ingredients:
2 watermelon steaks
1/4 cup of washed and cut fresh mint leaves
salt to taste
cooking spray/olive oil spray
1/2 cup feta cheese crumbles

Directions:
Watch video to learn the easiest way to cut a watermelon.
Spray two 1-inch steaks/slices with cooking spray/olive oil - if not at hand, brush steaks with oil on both sides.
Preheat your stove-top griddle over medium heat.
Add the watermelon slices and grill until nicely marked, about 6 minutes per side.
Set aside to cool for a minute.
Top your slices with mint leaves and crumbled feta.
Adjust salt if needed.
Enjoy!

Grilled Watermelon Steak with Cilantro and Lime
(serves 2)
ingredients:
2 watermelon steaks
1/4 cup of washed and cut cilantro leaves
salt to taste
cooking spray/olive oil spray
1/2 cup lime juice
fruity olive oil for a drizzle

Directions:

Spray two 1-inch steaks/slices with cooking spray/olive oil - if not at hand, brush steaks with oil on both sides.
Preheat your stove-top griddle over medium heat.
Add the watermelon slices and grill until nicely marked, about 3-4 minutes per side.
Set aside to cool for a minute.
Top your slices with cilantro leaves and a good squeeze of lime juice.
Adjust salt if needed.
Drizzle with olive oil to finish.
