Betty demonstrates how to make Jelled Lime Salad. This gorgeous green salad will dress up your St. Patrick's Day dinner, and it tastes wonderful!
Ingredients:
2 small packages lime jello (I used sugar-free.)
2 cups boiling water
2 cups cold water
20-ounce can crushed pineapple, drained (Save 1 cup pineapple juice.)
2 sliced bananas
2 cups miniature marshmallows
1 cup pineapple juice (This is the pineapple juice that was reserved from draining the crushed pineapple.)
1 well-beaten egg
½ cup sugar
2 tablespoons all-purpose flour
1 cup whipping cream, whipped
Dissolve lime Jello in 2 cups boiling water. Pour into a large bowl. Add 2 cups cold water. Chill in refrigerator until slightly thickened. Add drained pineapple, sliced bananas, and miniature marshmallows. Stir to combine, pour into a 13-inch by 9-inch by 2-inch Pyrex dish, and chill until firm. Combine 1 cup pineapple juice, beaten egg, sugar, and flour in a small sauce pan. Cook over medium-low heat, stirring constantly, until pudding is thickened. Cool. Fold in whipped cream. Spread evenly over top of salad. Cover with plastic wrap and chill until ready to serve. This is a delicious and gorgeous salad. I hope you enjoy it! Love, --Betty ♥♥♥
