Betty demonstrates how to make Potatoes with Onions and Smoked Sausage. This is a hearty combination that makes almost a full meal. Adapted from recipe by Katie Rhodus, printed in Richmond Register newspaper.
Potatoes with Onions and Smoked Sausage
2 tablespoons vegetable oil
12 ounces smoked sausage, sliced into ½-inch to ¾-inch slices
3 large Russet potatoes, peeled and thinly sliced
1 large onion, thinly sliced
2 teaspoons seasoned salt
1 teaspoon freshly ground black peppercorns
Place oil in cast iron skillet; heat. Add sliced smoked sausage and saute until browned; remove sausage from pan and place on paper toweling to drain. Immediately add sliced potatoes and onions to skillet drippings and sprinkle with seasoned salt and pepper. Cook, stirring continually, until potatoes are cooked through and browned. Transfer potato and onion mixture to platter. Place browned sausage in the center. Serve and enjoy! --Betty :)
