Baked Boursin Pasta @itsbrittwilliams brings you a spin on the viral Baked Feta Pasta. A simple and delicious meal prep dinner or weeknight meal for the whole family. Enjoy! Servings: 4 Ingredients 2½ cups cherry tomatoes 2 cups spinach ⅓ cup extra virgin olive oil, plus more as needed ¼ teaspoon freshly ground black pepper, plus more to taste ⅛ teaspoon salt 1 (5.2-ounce) package Boursin, Garlic and Fine Herbs 10 ounces pasta of choice 3 tablespoons chopped fresh basil 2 cloves garlic, minced 1½ teaspoons chopped chives Grated Parmesan cheese, for garnish Preparation 1. Preheat the oven to 400°F (200°C). 2. In a large baking dish, add the tomatoes, spinach, and olive oil. Season with pepper and salt, then toss until evenly coated. Form a well in the center. 3. Place the Boursin in the well; drizzle with more olive oil and season with black pepper. 4. Bake for 20-25 minutes, until the tomatoes are roasted, the spinach is wilted, and the cheese is melted. 5. Meanwhile, in a large pot, bring salted water to a boil. Add the pasta and cook until al dente, according to package directions. Drain and set aside. 6. Remove the spinach-tomato-Boursin mixture from the oven and mix together until well combined. Add the basil, garlic, and chives; stir until incorporated. 7. Add the cooked pasta and toss to combine, adding more olive oil if desired. Garnish with Parmesan cheese. 8. Enjoy!
