Ingredients:

2 eggs
1 cup brown sugar
1 tsp vanilla extract
1/4 tbls vegetable oil
1 tsp cinnamon
1/2 tsp salt
1 cup plain flour
1 tsp baking powder
1 cup grated carrots
1/2 cup walnuts, chopped

Icing
1 cup icing sugar
1 cup cream cheese, softened
1 tbls lemon juice
1 tbls water

extra walnuts to serve
