Ingredients
Salad Dip
1 cup Caesar dressing
½ cup sour cream
½ cup light mayonnaise
1 tsp Dijon mustard
2 garlic cloves, minced
Kosher salt, to taste
Freshly ground black pepper, to taste
2 Tbsp fresh lemon juice
¼ cup grated Parmesan cheese
1½ cups cooked and shredded chicken (you can use rotisserie chicken)
Salad Topping
2 cups chopped romaine lettuce
¼ cup grated Parmesan cheese
¼ cup croutons, crushed
Caesar dressing
Fresh lemon juice
Toasted garlic butter baguette or pita chips, for serving
Preparation
1. Make the salad dip: In a large bowl, stir together the Caesar dressing, sour cream, mayonnaise, mustard, garlic, salt, pepper, and lemon juice. Add the Parmesan and chicken and gently fold until the chicken is coated in the dressing.
2. Transfer the dip to a serving platter and spread in an even layer.
3. For the topping, scatter the romaine, Parmesan, and crushed croutons over the dip. Finish with a drizzle of Caesar dressing and a squeeze of lemon juice.
4. Serve with sliced toasted garlic butter baguette for dipping. (If making ahead, keep the dip and salad topping separate until just before serving.)
