COCONUT MILK 400 ml
CHICKEN 500 grms
2 MEDIUM POTATOES
2 MEDIUM TOMATOES
1 LARGE ONION
1 CAPSICUM
1 CHOPPED CARROT
4 CLOVES GARLIC
1 tbs TURMERIC
1 cm GINGER
25 grms FRESH CHILLI
1/2 tsp GROUND BLACK PEPPER
SALT
1 CUP OF WATER
OIL TO START
-ADD POTATOES TO HOT OIL AND FRY FOR 4-5 MINUTES AND SET ASIDE.
-FRYING THE POTATOES KEEPS THEM FROM BREAKING IN THE CURRY LATER.
-NOW WE WILL REPEAT THE PROCESS WITH THE CHICKEN
BY FRYING IT FOR 4-5 MINUTES AND SETTING IT ASIDE.
-WE WILL USE 20% OF THE SAME OIL AS IT HAS A NICE CHICKEN FLAVOUR.
-ADD GARLIC AND GINGER INTO HOT OIL AND STIR FOR 1 MINUTE.
ADD THE ONIONS AND COOK FOR A FURTHER 1-2 MINUTES.
-ADD TOMATOES AND COOK FOR 2-3 MINUTES
-ADD TURMERIC, AND IF YOU WANT ADD CURRY POWDER FOR EXTRA FLAVOUR
-ADD CHICKEN, CARROTS AND BAY LEAVES
-ADD COCONUT MILK, FRESH CHILLI, SALT & PEPPER AND BELL PEPPERS.
ADD THE WATER AND COOK FOR 8 MINUTES.
-GIVE IT A STIR EVERY NOW AND THEN.
