Crispy Rice Salad with Spicy Tahini Dressing
Serves: 2–3
Ingredients:
2 cups cooked jasmine rice (chilled)
½ cup mango, diced
½ avocado, diced
½ cup red cabbage, shredded
¼ cup radishes, thinly sliced
¼ cup cucumber, sliced
¼ cup fresh mint or cilantro
For the Dressing:
2 tbsp tahini
1 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp honey
1 tsp chili garlic sauce
1 tbsp water (to thin)
Method:
Press rice into a hot skillet with oil to crisp on both sides; remove and cool.
In a small bowl, whisk together all dressing ingredients until smooth.
Toss crispy rice with mango, avocado, cabbage, radish, cucumber, and herbs.
Drizzle with dressing and serve immediately.
