RECIPE:

Ingredients:
1 lb ground beef (I'm using Beyond Meat here!)
1 small onion, diced
1 green and pepper, diced
1 package taco seasoning mix
1 can black beans, rinsed and drained
3 cups shredded Mexican blend cheese
1 package frozen tater tots
4 eggs, whisked
Toppings: cilantro, sour cream (I'm using vegan sour cream with this), tomatoes, avocado

1. Preheat oven to 375 degrees and grease a baking dish.
2. Bake tater tots for about 10 minutes while preparing the beef mixture.
3. In a large skillet, brown the beef and add the taco seasoning mix. Stir together to combine.
4. Put beef mixture in the dish, add the onions and peppers.
5. Arrange tater tots on top of the mixture in a single layer.
6. Pour the eggs on top of the casserole.
7. Sprinkle the cheese on top and place back in the oven for 2-3 minutes or until cheese has melted.
8. Top with cilantro and tomatoes. Serve with sour cream + avocado mixture.
