Here’s a great way to beat the morning rush – make and freeze sandwiches (RECIPE BELOW) in batches, so you can simply grab when you need one and go.

Freezable sandwiches
Before you start, here are a few simple rules to get the best out of your sandwiches.
Avoid soggy sandwiches
Spread butter on the bread as it helps stop the bread from going soggy. Always place the wettest ingredients in the centre of sandwich fillings.
Wrap & freeze
Cut sandwiches in half then wrap tightly in plastic wrap. Place in the freezer. Keep sandwiches in the freezer for up to 3 months.
Thaw & pack
Place sandwiches in the fridge the night before to thaw. Pack in a lunch box with a freezer brick to keep the sandwich at the right temperature.
3 sandwich ideas
1 Chicken and avocado
Spread sliced wholemeal bread with butter, then spread with a mixture of mashed avocado, chopped coriander and lemon juice. Top with a mixture of shredded roast chicken, taco seasoning and mayonnaise.
2 Ham and hummus
Spread sliced white bread with butter. Top with shaved boneless leg ham, a mixture of hummus and chopped chives, and no oil semi-dried tomato strips.
3 Roast chicken and pumpkin
Spread sliced light rye bread with butter. Top with roasted pumpkin slices, tomato relish, basil leaves and shredded roast chicken.
