Jen recreates this New Orleans classic sandwich with the "other white meat" for the first time.
Ingredients—
1 lb alligator, cubed
1 cup all-purpose flour
½ cup yellow cornmeal
1 tsp cayenne powder
2 tsp smoked paprika
2 tsp garlic powder
2 tsp onion powder
½ tsp dried oregano
½ tsp dried thyme
Salt and pepper to taste
1 Buttermilk
1 egg
Sliced tomatoes
Shredded iceberg lettuce
French bread
Mayo
Hot sauce
Canola oil for frying
Steps—
In a bowl, combine flour, cornmeal, cayenne powder, half of the smoked paprika, garlic powder, onion powder, oregano, thyme, and salt and pepper. In another bowl, combine buttermilk, egg, and the other half of the seasonings.
Add cubed alligator to the wet bowl and let marinate for at least 30 minutes.
Heat oil in a cast iron skillet on medium-high. Dredge marinated alligator in the dry bowl and shake off any excess. Fry in oil for about 5-6 minutes or until golden brown. Be sure not to crowd to skillet. Set aside on paper towel or a drying rack to drain.
Slice bread in half and toast until lightly golden. Spread both sides with mayo. Layer shredded lettuce, fried alligator, hot sauce, and tomatoes.
