This leftover Thanksgiving Breakfast Hash will take the pain out of any Thanksgiving Hangover you may have! Full recipe below:

Thanksgiving Hash
Yield: 2 servings
For hash:
⅓ C onion, small diced
1 C leftover ham/roast pork/turkey, small diced
1 ea. Medium Yukon potato, small diced
1-2 T grapeseed oil
1-2 T butter
¼ C “bottom of the bag” crumbled plantain chips
2 T chives, sliced
2-4 ea. eggs
Method:
Drop diced potatoes in a 350F fryer, and fry until golden (3-5 minutes).
In a large pan, over medium-high heat, add oil, onions, and leftover meat. Saute until meat is golden brown and onions are translucent (3-5 minutes). Add cooked potatoes, butter, and season with salt. Garnish with chives. Serve. Add crumbled chips.
Top with a sunny side up eggs.
